Yesterday Reid decided to wake up at 4:45... joy.
Aaron took over around 5 so that I could get about 10-15 more minutes of rest. I appreciated it more than he knew... Radar decided it was a great time to need to be pet...
I got up and showered and got ready for the day and Reid was fussy because she was tired before we left for the sitters.... Well, stay in bed, kiddo!!
Work, again. This week has kicked my butt. It was my first full week back and I am so ready for a break!
After work Paula and I wanted to get in some strength training.
I have no strength in my arms. Not any. I know this will somehow help my running. I would have preferred to have done some deadlifts or whatnot, but where I hurt my back earlier in the week, I felt like I still needed to let it rest a bit...
Here is what we wanted to do...

Buuuuut there was some confusion apparently and a team took over the weight room... so we just walked briskly around and stopped every so often to do burpees or squats or planks... all the things that hurt.
Thursday is for the gymnastics... and the naps...

I couldn’t see Reid to see if she was asleep like Lynnleigh, so i stuck my camera back in her car seat to take a picture and this is what I got. Epic. And awake.

I wanted to make a burrito bowl thing for dinner but failed to realize it cooks for 4 hours, not 8, and then you have to add stuff and I cannot come home halfway through the day to add the other stuff soooooo it'll be a Saturday meal! I guess we'll be eating chicken and rice and broccoli tonight...
Without further adieu, here is this week's recipe!! If you love egg rolls, you'll love this easy and healthier version! It makes 4 servings and can be altered to meet your goals. I make it on Sunday and take it Monday through Thursday for lunch. It's delicious and keeps really well in the refrigerator for the four days! It has a good amount of crunch and tons of flavor!

EGG ROLL IN A BOWL
Makes 4 Servings:
Calories per serving: 251
Fat: 11
Protein: 30
Carbs: 5
You will need:
1 lb ground turkey (You can also use chicken or pork- chicken doesn't change the calories or macros too much, but pork does. It has more fat, but it.is.delicious.)
1 red pepper
5 green onions
1 bag of cole slaw mix
2 tsp minced garlic
1/4 soy sauce
1 tsp ground ginger
Directions:
Brown the meat of your choice. While it is browning, slice your red pepper and chop the onions, separating the white and green parts.
Add in bag of cole slaw mix, red pepper, whites of onion, and garlic and saute for 2 minutes, give or take.
Add in ginger and soy sauce and saute another 2-3 minutes.
Top with green onions.
That's it!! You can tweak this recipe to your liking. For example, if you aren't a fan of garlic, only add one tsp minced. If you want fresh garlic, use around 4-5 cloves. If you are not a fan of ginger, don't put the full tsp. I don't measure the ginger, I just sprinkle it. I'm not a huge fan of it so I don't add the full tsp.
This is such an easy recipe and is so delicious! I use my wok and it is a one dish meal, easy to clean up!
